Springtime Superfoods to Add to Your Diet

Spring was a little late coming to the upper midwest this year, but it’s finally here! That means that I can do the majority of my grocery shopping at the local farmer’s market and get fresh, locally grown produce, meat, and eggs while supporting my farming neighbors 🙂  Here are just a few of the healthy springtime superfoods (along with recipes) that you can add to your diet:

For more recipes that will help you make the most of your seasonal produce, I recommend Tricia Cornell’s book, “Eat More Vegetables” – with chapters divided into spring, early summer, high summer, late summer, and early harvest. Some of my favorites are kale chips, braised fennel, and a high summer chilled salad. Enjoy!
